
BABA GONKY! BBQ
This section contains some of my favorite recipes from the grill and are taken from my cookbook: BABA GONKY! BBQ: Healthy Recipes for the Grill and Smoker. The fuel for these recipes is lump charcoal and wood. As an option – you can place the charcoal and wood to one side and grill the meat on indirect heat to get some smoke, then place directly over the heat source to finish.
Hamburgers
Materials
Wood – hickory, oak, whatever you want!
Bag of lump charcoal
Charcoal Chimney
Fire starter – newspaper, tumbleweeds, etc.
Meat Thermometer
Ingredients
¼ lb. ground hamburger (80/20 or 90/10) – per hamburger
1 Tablespoon of Basil
1 Teaspoon of Garlic Salt
½Teaspoon of Rosemary OR 1 teaspoon of dry seasoning or rub (your choice)
Fire Preparation and Directions
Apply your favorite seasoning to each hamburger at least 30 min prior to grilling.
Fill the charcoal chimney with lump charcoal, and place loaded chimney on top of your fire starter, and light. Once the lump charcoal is heated, add to your firebox. When you have a good bed of coals add the wood.
When the temperature reaches 275℉ -300 ℉, place the hamburgers on the grill and cook each side for 3.5 min – 4 min (7 to 8 minutes total cooking time. Cook to an internal temperature of 160℉, as measured by the meat thermometer.
Chicken
Materials
Wood – hickory, oak, whatever you want!
Bag of lump charcoal

Fire starter – newspaper, tumbleweeds, etc.

Ingredients
6 – 8 oz chicken breast – per piece of chicken
1 Teaspoon of Garlic Salt
½Teaspoon of Rosemary OR 1 teaspoon of dry seasoning or rub (your choice)
Fire Preparation and Directions
Apply your favorite seasoning to each chicken breast at least 30 prior to grilling.
Fill the charcoal chimney with lump charcoal, and place loaded chimney on top of your fire starter, and light. Once the lump charcoal is heated, add to your firebox. When you have a good bed of coals add the wood.
When the temperature reaches 275℉ -300 ℉, place the chicken on the grill and cook to an internal temperature of 160℉, as measured by the meat thermometer.
T-Bone Steak
Materials
Wood – hickory, oak, whatever you want!
Bag of lump charcoal

Ingredients-
1 — 1.5lbs. T-Bone Steaks
1 teaspoon coarse salt
1 teaspoon coarse pepper
Fire Preparation and Directions
Apply salt and pepper at least 30 minutes prior to grilling.
Fill the charcoal chimney with lump charcoal, and place loaded chimney on top of your fire starter, and light. Once the lump charcoal is heated, add to your firebox. When you have a good bed of coals add the wood.
When the temperature reaches 275℉ -300 ℉, place the t-bone on the grill and cook to your desired doneness, as measured by the meat thermometer:
Medium Rare – internal temperature of 135℉ – 140℉
Medium – internal temperature of 150℉
Well-Done – internal temperature of 165℉
